Recipe of the month: Iron-power salad with lentils

Recipe – Iron-power salad:

Ingredients:

  • 500g lentils
  • 200g feta cheese
  • 100g beetroot
  • 50g pumpkin seeds
  • 50g linseed
  • 50g sesame
  • 50g sunflower seeds
  • 1/2 bunch of fresh parsley

 

Ingredients for the dressing:

  • 5 tbsp pumpkin seed oil  
  • 3 tbsp vinegar  
  • 2 tsp honey  
  • 1 dash of fresh lemon (for a better iron uptake)
  • salt and pepper to taste

 

Stir all ingredients, season to taste and enjoy!
