Histamine-degrading enzyme requires micronutrients
Histamine is an endogenous building material that is also found in a large number of foods. Foods that undergo a maturing process or prolonged storage are particularly rich in histamine. Typical examples are sauerkraut, pickled fish or well-ripened cheese. Histamine is broken down in the body by the enzyme DAO (diaminooxidase). This enzymatic process requires special micronutrients as co-factors, especially vitamin B6, copper and zinc. In addition to its function as a cofactor, zinc also contributes to normal protein synthesis. The body's own enzymes, such as diamine oxidase (DAO), are also proteins. The AH & Glutamine Formula developed by Biogena contains this special combination of nutrients and also supplements it with the amino acids L-Glutamine and Vitamin C.
